Vineyard 29, Aida Zinfandel paired with Ratatouille and Italian Sausage

Ratatouille

INGREDIENTS

  • 2 Yellow Onions
  • 1 Eggplant
  • 1-2 Yellow Squash
  • 1-2 Zucchini
  • 4 Ripe Red Onions
  • 6 Cloves of Garlic
  • 6oz Can of Tomato Paste
  • 1-2 Sprigs of Thyme
  • CRU Olive Oil

 

RECIPE PREPARATION

  1. Pre-heat the oven to 375 degrees.
  2. Dice one yellow onion and the garlic.  Thinly slice all the vegetables, make sure there are different sizes ranging from small to large.
  3. In a pie dish, combine olive oil, chopped garlic and onion. Add the can of tomato paste and 2 tablespoons of CRU Pinot Noir Spice, combine well. Sprinkle a little fresh thyme at the bottom.
  4. Arrange the sliced veggies in alternating patterns, (for example, eggplant, onion, tomato, squash, zucchini) on top of the sauce from the outer edge to the middle of the pan. Season with CRU Pinot Noir Spice.
  5. Cover with foil and bake for 40 minutes.

Sausage

We used two different Italian Sausages, Hot and mild. You can prepare these any way you like! For this recipe, we barbecued ours to bring out the smokey flavor of the CRU Pinot Noir Spice and the delicious flavors of the Zinfandel.

Vineyard 29, AIDA Zinfandel

Crafted to be thoroughly enjoyable upon release, this wine will also age gracefully for 15+ years.

CRU Pinot Noir Spice

CRU Pinot Noir Spice is blended to celebrate the lush cheery, plum, dried rose petal and truffle notes of our CRU Pinot  and enhance its silky finish. The stunning ingredients in this fire red seasoning are: Coriander, Bell Pepper, Paprika, shallots, smoked pepper and a proprietary blend of spices. The pinot seasoning will go perfect with pork ribs, meat rubs, shrimp, chicken and barbecue.
